Riikka Kokko
Riikka Kokko is a Master of Food Sciences from Finland and a Research Assistant at the University of Helsinki. She specializes in sustainable food systems, with a focus on assessing the environmental impacts and nutritional quality of alternative diets to meat. Her work with the Future Sustainable Food Systems research group at the University of Helsinki has contributed to advancing knowledge on sustainable diets through Life Cycle Assessment and Nutrient Rich Diet indices.
